Meet The Chef
A graduate of the prestigious Culinary Institute of America, Colombian born, and raised in Queens N.Y., Carlos is a Martha’s Vineyard and Boston based chef that has been cooking for more than 20 years. He has held numerous roles throughout his career in New York, Boston and Martha’s Vineyard.
Such roles include Saucier at Charlie Palmer’s original 2 Michelin Star Aureole location, Sous Chef for the “GodFather of Nuevo Latino Cuisine”, Douglas Rodriguez; Chef de cuisine for numerous years at the Sweet Life in Oak Bluffs, and his most current role was working with renowned restaurateurs, Tim and Nancy Cushman. Having worked in all Boston locations, O ya, Hojoko, and opening the fast, casual concepts Miss Cluck’s Chicken Deluxe and GoGoYa in Timeout Market.
Carlos has also had the pleasure of having cooked for Presidents Barack Obama, Bill Clinton, and both Vernon Jordan and his wife, Ann Jordan’s 80th birthday parties.
He calls his style, “Inspirational cooking”. He is inspired by the seasons, by what’s available, and what’s local.
His experience with cooking a wide variety of cuisines is deep, and that experience allows him to be nimble when introducing new ingredients to familiar dishes or when it comes to merging modern gastronomy with classic French techniques.
